I have always loved making this simple avocado toast and egg recipe. It’s tasty, versatile and healthy too! In the last few years, avocados became really trendy. And I mean avocados are everywhere! They are front and center in the grocery store, they are being blended into smoothies and they are making an appearance on restaurant menus across the country.

There are many popular versions of the avocado toast recipe . Every restaurants’ breakfast and brunch menu seems to offer different kinds and people are eating it up (literally!). So what is so great about it? And why should you be eating it? Let’s find out…

One Bad Way to Ripen an Avocado

One thing I have read online about ripening avocados is to microwave them, don’t do this! Trust me! I tried once and not only did my whole house smell very weird for the next few days but the avocado came out hot and was oozing brown juice.

The avocados also sported lots of brown spots when I cut into it. Yes, microwaving the avocado did make it softer but not by any means ripe or tasty. Tried and true patience is the way to go.
