If you didn’t already know, I’m a big fan of eggs for breakfast and even lunch and dinner. I eat a lot of eggs, sometimes four a day! As a vegetarian, they’re one of my main sources of protein.

In fact, one large egg offers an impressive 6 grams of protein. This is high-quality protein, meaning it’s easy for your body to utilize.

Eggs also offer up the nutrient choline, which is really important for brain development during pregnancy—in fact, many would argue it’s as important as folate!

Choline may continue to positively impact cognition later in life, beyond the baby years. Eggs offer so many nutrients, so get the truth about eggs and cholesterol.

How do I eat my eggs?

As part of its “How Do You Like Your Eggs” campaign, The American Egg Board wants to inspire people to break out of the ordinary and think of all the ways to enjoy eggs.

Well, how do I like my eggs? Here’s my answer: While I love eggs in traditional dishes like omelets, I also love to enjoy them for eating occasions beyond breakfast—such as snack time.

So I decided to bring one of my favorite snack recipes to you, which just happens to feature nutrient-rich eggs.

Ingredients

The ingredients in this green deviled eggs recipe are pretty minimal:

Eggs: Each egg provides 6 grams of high-quality protein!

Avocado: This healthy fat adds a pretty green color to the deviled eggs. When you add the avocado to the recipe, you also add heart-healthy fats.

Lemon: When you make the deviled eggs ahead of time, the lemon juice helps keep everything fresh. The lemon juice contains choline.

Dijon mustard: I love cooking with mustard! The condiment adds a little tang.

Spices (paprika, salt, and black pepper): These spices add pretty color and some nice flavor.

Step-by-step instructions

You’ve probably had traditional deviled eggs at least once or twice. Because I’m a registered dietitian nutritionist, I’m always thinking of ways to add even more nutrition to my favorite dishes.

The first step to making avocado deviled eggs is hardboiling the eggs. Once they’re cooked, peel and let them cool. Then slice the eggs in half lengthwise and remove the yolks.

Then you combine the yolks, avocado, lemon juice, mustard, and salt and pepper to taste in a food processor. Process until smooth.

To create a homemade piping bag, add the mixture to a zip-top plastic bag, cutting off a ¼-inch piece at the bottom corner. Pipe the filling into the halved egg whites.

To finish everything off, simply top the creation with black pepper and smoked paprika.

You can eat these deviled eggs with paprika for a snack like I did, or you can serve them as an appetizer at your next dinner party. The paprika deviled eggs will quickly become one of your favorite smoked paprika recipes!

If you don’t have any paprika on hand, other spices that would work for sprinkling on top of the eggs include cayenne pepper, chili powder, or garlic powder.

What if I don’t have any lemons on hand?

If you don’t have any lemons on hand, feel free to use lime juice instead.

Can I make deviled eggs ahead of time?

Yes, you can! If you’re going to save these for later, make sure to cover them tightly with plastic wrap to store in the fridge. It’s best to eat them within 1-2 days of making them.

Are deviled eggs healthy?

They absolutely can be. I made these deviled eggs without mayo by combining hard-boiled egg yolks, avocado, lemon juice, Dijon mustard, salt, and black pepper in a food processor.
